We are very lucky and have a lot to be thankful for this year. Living in Bermuda has been such a wonderful experience for us and we have met so many wonderful people. Last night, we celebrated thanksgiving on the island with some friends, who we are definitely thankful for. They become family when our families are far away and without them, life wouldn't be half as fun!
I haven't done this in years, but used to every year when I lived in San Diego and I think even one year in college. This wasn't a traditional thanksgiving, but had most of the components in my way. I know, you're all wondering what was on the menu....
For a light bite before dinner, we had pancetta crisps with goat cheese, figs and honey
Then a butternut squash soup with crispy proscuitto
Dinner was a butterflied turkey with fennel ricotta stuffing and a fennel gravy, balsamic roasted potatoes, sauteed broccoli rabe with garlic, oil and chili pepper, roasted cippolini onions and a fig and cider compote.
Dessert was a chocolate cranberry tart and pumpkin caramels.

It was a fun evening catching up with friends and except for carving the turkey, a fairly stress free meal.
We are thankful for the opportunity to live here, the space to entertain in and the friends we have made.
